Thanks giving meal notes
Turkey was roasted on the gas grill ar 325 for about 5 hours. It came out very well. I turned the temp down when the turkey was at 160, and off when it hit 170. I left it on the grill till we wanted to carve it
Have someone make mashed potato
Stuffing without eggs, and started with raw vegetables was delicious

For the next time I make bread-- google the Tangzhong method where a portion of the flour and liquid is pre-cooked into a paste. This process makes an incredibly soft loaf. The process of making the past gelantizies starches in the flour and allows more water to steam within the loaf, fluffing it up.

Sous Vide Brisket
I don’t have a smoker, so I thought I’d try brisket in a sous vide. It turned out very well.
Notes…
5lbs of brisket is about the largest I can fit in my sous vide.
For the rub I used several almost-empty spice mixes. In total, the rub was about 40% salt, 40% pepper. Before sealing it up, I added a couple drops of liquid smoke to the bag.
I cooked it for about 30 hours at 155.5
After the sous vide, I browned the brisket on acast iron in a gas grill that was at 500f. One minute per side.

La Rustica
Lovely higher end Italian restaurant. If your timing is right, you can watch the sun set from their patio.

Taqueria La Fondita
A taco truck in White Center. Food is very good, though perhaps slightly pricer than other taco trucks.

Raccolto
Wonderful family style Italian. Higher end pricing. We had an evening dinner there with a few friends and enjoyed the food very much. The cavatelli was delicious.
Happy hour menu available.

Mexican Wedding Cookies
notes on the Joy of cooking’s Mexican wedding cookies. The recipe is great. The balls can be made on the small side. We made balls too generous. The cookie ended up being to big to fit in your mouth. The balls don’t flatten much during baking.

Ingredients
- 2 cups almond flour 1/2 cup butter
- 1 cup erythritol
- 2 tsp baking powder
- 1 tsp vanilla extract
- 1 cup sour cream
- 2 ounces cream cheese
- 4 large eggs
Instructions
- Preheat oven to 350 degrees Fahrenheit
- Generously butter a 9 inch bundt pan, set aside
- Combine almond flour and baking powder in a large bowl, set aside
- Cut butter into several small squares and put in separate bowl, add cream cheese
- Microwave butter and cream cheese for 30 seconds. Be careful to not burn cream cheese. Stir these wet ingredients together until well combined.
- Add erythritol, vanilla extract, and sour cream to butter and cream cheese mixture. Stir well.
- Pour wet ingredients into large bowl of almond flour and baking powder. Stir well.
- Add eggs to batter. Stir well.
- Pour batter into buttered bundt pan, place in oven and bake for 50 minutes or until a toothpick placed in the cake comes out clean.
- For best results, let cake cool completely for at least 2 hours, preferably overnight. If you remove it too soon, it may crumble a bit.
